I agree with the inspection results but have since carried out the following improvements:

The establishment has been thoroughly cleaned and procedures are in place to ensure that cleanliness is maintained

A new management system has been implemented

The staff have been trained/re-trained/given instruction/are under revised supervisory arrangements

All necessary hygiene standard improvements were completed by 29th April 2024.  The food safety officer is pleased with Don Don Yatai's efforts to address the non-compliance issues identified during the initial inspection.

Some of the improvements made include, but are not limited to:

Implemented a new "Store Opening Procedure" and provided staff with appropriate training to uphold high hygiene standards.

Revised "Cloths Cleaning Procedure" as per the food safety officer's recommendations.

Thoroughly cleaned the kitchen's flooring and wall junctions

Conducted additional training for staff on the correct use of `Safer Food Better Business' daily diary sheets.

Adjusted the allergen matrix to align with the updated food menu.

The conditions found at the time of the inspection were not typical of the normal conditions maintained at the establishment and arose because:

Don Don Yatai has reduced manpower since mid-March 2024, as the weekly opening days being reduced from six to three.  This led to a lack of adequately trained personnel to uphold the usual standards during the inspection.  Our plan includes hiring more staff to address this issue.

Currently, Don Don Yatai is anticipating a re-rating inspection.  As a conscientious catering establishment, our team is dedicated to ensuring the safety of the food we serve.  We will continue to diligently manage food hygiene and safety procedures to comply with relevant food laws.
