I agree with the inspection results but have since carried out the following improvements
- The establishment has been thoroughly cleaned, and procedures are in place to ensure that cleanliness is maintained.
- A new management and control system has been implemented.
- The kitchen has been reorganised and new equipment purchased.
- All kitchen staff have been informed of the changes and the need for strict obeyance of the standards.
- A new internal kitchen auditing system, Trail is being introduced to ensure standards are maintained on an ongoing basis and to ensure staff co-operation.
- Ongoing training of all staff on hygiene, allergens and best practice has been implemented
- A new Senior Sous chef has been employed to support the head chef, enforce standards and help educate all kitchen staff. ( starting in one month)
The conditions found at the time of the inspection were not typical of the normal conditions maintained at Cubley Hall and arose because management oversight had been allowed to slip and personnel in the kitchen had not performed to the expected standards.
We are working closely with Barnsley Councils Food Safety Team to ensure the correct standards are achieved and maintained. We have also applied a for a reinspection and are now awaiting a new inspection, with a view to raising our Food Hygiene Rating
